Waldorf Chicken Salad



I've seen so many recipes for this dish. Some complicated and others not so much.....but the main idea is this: Chicken, fruit and mayo.

This is a great meal for my family when its hot outside. We eat it on crackers, inside rolls, on a bed of lettuce, with little tostas, or just plain in a bowl. It's light, slightly sweet, and it's loaded with fruit which is always a hit with my kids.

I use:

Cooked, diced chicken breast
apples, several different kinds, diced with peel
grapes, de-seeded
almonds or walnuts
celery, cut into small pieces
raisins
light mayo
honey

I cut up everything, throw it in a bowl, fling on some mayo and honey and mix it up until it looks and tastes right.

I'm such a sophisticated cook, aren't I?! Following recipes isn't really my thing. I like to make things as simple as possible. Good food doesn't have to be complicated.

It's easy and fairly quick if you have some kids willing to help dice up the fruit and de-seed the grapes! (But if your stateside, you can buy seedless grapes...sniff...sniff...)

This week is full of celebrations for us and occasions to cook. Yesterday we had one of the girls teachers over to eat with us. I served this chicken salad which was very different for her, but she seemed to like it.

Sounds like a great recipe! I wish I could eat apples, but I'm allergic. Crazy, huh? So much for an apple a day keeps the doctor away. Thanks for adding this recipe!

American recipe´s are often where the meat´s are done "sweet". Like honey in your chicken. I really have never tasted it, because we always have our meat salty.
Then again, when I eat chinese sweet and sour pork, I like it, so this must be good too.

Mmmmm....I always thought a Waldorf Salad was really complicated. It just sounds complicated. The Waldorf is a big complicated hotel. Maybe that's it.

This sounds terrific. I'm going to try it!

I can´t wait to try it. It will have to be a supper for us as my guys always have to have somthing hot for comida (middle of the day) Meat, and carbs to make them feel good deep down inside. LOL

But I sure like this recipe for all the fruit. Hey you need to come to Spain. We just started being able to get seedless grapes. Mercadona! woo hoo! I am tempting you I know. I just want you to come over for a visit. ;) tee hee

Some of the ladies I work with and I were just talking about chicken salad. I told them I have made it 2x in about a month and Terry just gets a big bowl and eats it! When I make it, it turns out to be about 5lbs of salad.. thats alot! And he will eat it in 2 days time. I guess that means he likes it. I told him the last time I made it that it was more like a fruit salad because it had more fruit than chicken.
I didnt put any honey in it though. I will try that next time.
